I would like to implement the option PDF Download of the whole book in the UniversalViewer and not only the JPEG download. Is it possible?

I’m not sure how you would do that in the UniversalViewer, but I think I would just add the link to the template if it were me.
In the template you can get an array of media for an item as shown below and then you might just have to filter to get the pdf:
$item->media()
