I’m wondering if there’s a way to have the collections themselves (in a similar way that the items within them can be reordered) in alphabetical order as opposed to when they are added when people ‘browse collections’? Sorry if I’ve missed something obvious.

The collections browse page can be ordered, as pretty much any browse page can. Themes usually include a sorting selector on the page itself with alphabetical ordering as an option. Or are you thinking more in terms of defaults, or something else?
