Does Omeka-S offer the possibility to make choices in fields using custom vocabularies depending on each others values?
For example: if one makes a choice in field1 using custom vocab1, that automatically leads to the choices of field2 using custom vocab2 to be limited to a set of values which is only applicable for the choice made in field1/custom vocab1?

I’m pretty sure this isn’t an option. It’s something I’d be interested in as well, but I think it’s been asked before on the forum, and it hasn’t been added to core or a module created.

You are certainly welcome to post an issue to the github repository for the Custom Vocab Module. However, the scenario you describe would necessitate a whole new conditional architecture that is incredibly complex and goes well beyond the initial design purposes of the module that is designed for generalized use cases.
A better approach might be to develop a custom module that enacts those conditions for your particular use case.
As for the roadmap, generally, the Omeka Team pays very close attention to the kinds of issues and feature requests that come up on the forums. We include that data in our consideration when we do our roadmap planning for the year. Once that higher level agenda is set in December, we parcel out the specific requirements for that work into the quarters of the upcoming year. So, the table is mostly set in January of each year.
