Is there a way to allow guest users to suggest and edit metadata of items ?

Guest users are designed to not have access to the admin side, so you’d really need to give those users a higher role that allows access to editing.
An alternative might be the Corrections plugin. It’s not especially well-developed, but lets anyone on the site submit a correction, which an administrator then reviews.
