So, i can change the “Original Filename” in tthe “Format Metadata” but is it possible to change the filename? So that, when i save the file it doesn’t save it, as an"34a280a01d176c1c4cabcbceaf7358c7" for example?

Those long hashes are used internally by Omeka, so you can’t really change those without breaking some ways that Omeka keeps things together, at least with Omeka out-of-the-box.
However, I think the Archive Repertory Plugin does what you are talking about.
